Chocolate-filled baby hazelnut cookies (gluten + dairy-free)
Try as I might, pulling together a new recipe for a post this past month was just not ever going to happen. Between final book edits, dance rehearsals, end of year school trips and packing up our ENTIRE LIFE to ship home to NZ (in just over two weeks,eeek!), lets just say I’ve barely stopped to eat anything more exiting than a piece of toast for lunch. Finding that spare minute to play in the kitchen is but a lofty dream of mine right about now.
I had plans to start a new series, showing how I went about using up all the random ingredients I have in my pantry, but alas, that will have to keep for another time. Preferably a time when I’m not having to put drops of rescue remedy in my drink bottle in an attempt to keep the near panic-attacks at bay…
So instead of beating myself up for not having time to post here, I’m just going to put it out there that it’s unlikely I’ll be around here until after we’ve settled safely back in NZ. Because I couldn’t just up and leave you without offering something to get you into the holiday spirit, I’ve rounded up all the cookie recipes from the archives below, for those of you who have time to get your bake on!

Chocolate-filled baby hazelnut cookies– as shown above.
These cookies contain only a handful of ingredients (6 to be exact, including chocolate), take mere moments to pull together and are reminiscent of amaretti biscuits in texture. Crispy on the outside and lovely and chewy in the centre.
No-bake chocolate granola cookies (gluten-free + vegan)
These no-bake cookies are perfect for those of you wanting a slightly ‘healthier’ cookie treat, and are a great thing to have at hand in the freezer throughout the silly season.
Raw apricot, dark chocolate + coconut bites (gluten-free + vegan)
As with the previous recipe, these bites offer a healthy alternative to flour, butter and sugar based cookies. They’re naturally sweetened with organic dried apricots, offering a sweet, but not sickly-sweet treat that also happens to be nut-free for those of you who need this.
Chocolate chunk cookies (gluten-free)
These thick, slightly chewy, buttery cookies are close to traditional chocolate chip cookies but made with the goodness of wholegrain gluten-free flours such as teff, buckwheat and quinoa. Super good.
Raw maqui, cashew + lime bites (gluten-free + vegan)
For those of you who don’t like to go down the chocolate cookie route, these might just be your thing. Light, bright flavours are at the fore in these no-bake ‘healthy’ bites.
Thyme + black cherry jam drops (gluten-free)
These buttery jam drops are flecked with finely chopped thyme to give them a beautiful herbal note.
Spiced orange chocolate chunk cookies (gluten-free)
Buttery cookies, flecked with plenty of orange zest, warming spices and generous chunks of chocolate, these have been a firm favourite in our house for years and years. There’s also some great Christmas links within this post.
Healthy banana, date + orange cookies (gluten-free + vegan)
Sweetened with only the natural sweetness of ripe bananas and a little finely chopped dates, these cookies are healthy enough to eat for breakfast. Add a little chopped chocolate if you feel the need…
Mexican chocolate almond cookies (gluten-free + dairy-free)
Rich chocolate cookies free from both gluten and dairy, these cinnamon and chilli-spiked cookies are beautiful. Enough said.

Hope you have a wonderful move, thanks for everything and it was so great to do your gluten free pastry class in Perth while I could, I've always wondered when or if you might get to move back to nz. Hope the transition is smooth, that it feels perfect to be home, I've no doubt it will. Every time I go back to uk I wish I could stay longer but marrying a farmer means I can't go for good.
