I’ve had this recipe sitting in my drafts for years. It’s crazy I’ve not shared it already but I seem to keep missing the moment when strawberries are in season and everyone’s looking for festive recipes, probably because I’m running around like a headless chicken most of November and all of December.
Using only a handful of ingredients and dependable flavours, this salad has a lot more going for it than it may appear at first glance. Fresh peppery bite from the rocket (arugula) is further accentuated with the black pepper dressing, sweetness from the berries and creamy goats cheese to pull it altogether. It’s also a damn site more festive than you’ll ever catch me feeling at this time of the year (lol, bah humbug), so if you’re one of those organised folk who are already thinking that far ahead, pop this simple salad on your menu.
Strawberry, rocket (arugula) + goats cheese salad with black pepper dressing
Ingredients
- 250g punnet strawberries hulled + sliced in half or quartered if large
- 2 large handfuls rocket (arugula)
- 60 g goats cheese crumbled
black pepper dressing
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon honey or pure maple syrup
- 2 tablespoons balsamic vinegar
- 3 tablespoons extra-virgin olive oil
- fine sea salt
Instructions
- Combine berries and rocket leaves in a large bowl, scatter over crumbled goats cheese. In a small bowl combine black pepper and honey or maple, whisk in the balsamic, then olive oil. Season with salt and drizzle over the salad. Serve immediately.
